Stuffed Medjool Dates 2 Ways  -Pair with Rioja

Look for pitted Medjool Dates in Produce Section

of grocery stores next to nuts.

 

6-12 Medjool dates

6      Whole Almonds

6      Tbs Chèvre (Soft Goat Cheese)

 

        Serrano or Prosciutto ham cut into thin strip

6      Tbs Gorgonzola cheese

 

Almond & Chevre

  1. Make a slit in each Date lengthwise and remove seeds.

  2. Slide in 1 almond and add using a small spoon add Chèvre

  3. gently squeeze date closed with finger

 

Ham and Gorgonzola - Pair with Albarino

  1. Same prep as above however fill date with strip ham 

  2. then fill with Gorgonzola Cheese

Salted Spiced Nuts -Pair with Rioja or Albarino

1 1/2 cups whole almonds in skin

4       Tbs EVOO

         Course Sea Salt

         Ground Cumin

 

  1. Preheat Oven to 350” put almonds on sheet pan and toss with

      EVOO.

  1. Roast Almonds in oven for 20 min. toss several times during cooking

  2. Drain Almonds on Paper towels then add to bowl. 

  3. Sprinkle with sea salt and Cumin and save warm or cold

Roasted Asparagus Wrapped in Ham -Pair with Rioja

6     Slices Serrano or Prosciutto Ham Cut Crosswise 

12   Asparagus Spears (Try to buy thicker spears) Trim Ends

       EVOO

       Cracked Pepper

       Aioli (See Recipe included)

 

  1. Pre heat oven to 400’ and 

  2. pour a little EVOO on Sheet pan and spread out to coat pan

  3. Roll each asparagus up in 1 piece of ham and place on prepared pan

  4. Brush tops of rolled asparagus with EVOO and top with cracked pepper

  5. Roast in oven for about 10-12 min. or until tender but still firm

  6. Serve with Aioli (see recipe)

Roasted Potatoes With Paprika & Aioli -Pair with Albarino

1 lbs   Small GoldPotatoes (Preferably Fingerling)

3 Tsp   Smoked Paprika

1 Tsp  Ground Cumin

4 Tbl    EVOO

1 Tsp   Sea Salt

 

  1. Pre heat oven to 400’ and put Salt, Smoked paprika and Cumin in bowl to mix

  2. Slice Potatoes in 1/2 Lengthwise and put on Sheet pan

  3. Drizzle EVOO over potatoes and sprinkle with seasoning mix

  4. Toss all together until well coated and seasoning is distributed

  5. turn all potatoes cut side down 

  6. Roast in oven for 15-20 min or until just browned and tender inside

      Place on Paper towel then into bowel serve with Aioli (see recipe)

Short Cut Aioli with Garlic and Lemon -Pair with Albarino

3/4   Cup Light Mayo (Best Foods)

1/4   Cup Plain Greek Yogurt

        Zest of one Lemon

       Juice of one Lemon

3-5  Garlic Cloves (per your preference)

       Minced or micro plane grated

4-5  Tbl EVOO

       Good amount fresh cracked pepper

       Salt to Taste

 

  1. Mix all ingredient thoroughly and place in Refer for at least and hour

  2. Take out of refer and set out for 30 min to let flavored meld stir and serve
