Renowned Mission Bistro chef de cuisine Matt Zimny has developed a six-course pairing menu inspired to perfectly pair with select small-production estates from New South Wales, South Australia, Victoria and Western Australia. The wine curations range from Australian classics to “young guns” that are ever-advancing one of the world’s most dynamic wine-producing countries.
